Well, well, well… 2022 has flown by hasn’t it! I can’t believe we’re already on day one of bakemas – it only seems like yesterday it was the start of the year.
Bakemas is back in full swing in 2022 – nothing will stop me from sharing the content I have been making to share. I have been doing bakemas since 2022 – I have tried to keep it to everyday from the 1st-25th of December and I intend to do the same this year. I may not have all the content ready but I promise it’s going to be fun and full of delicious sweet treats to make and bake for your family and friends this festive period.
Anyway, you may remember sometime ago on bakingwithelliott.com, I made a white chocolate rocky road, it was a literal slab of white chocolate rocky road (not a bad thing, at all). I thought seeing as things are so different this year compared to the years before, I thought something thats no bake, low effort and easy to make, would be in order to keep the stresses of life at bay.
If you have never had rocky road before, where have you been? It’s a sweet no bae treat, made of a chocolate base with your favourite fillings, like marshmallows, biscuits and chocolates – the choices you have are endless! You simply place into a try, chill and enjoy. You don’t need to do anything more than that – making g it perfect for this time of year, especially as things can get stressful.
Anyway, lets gets started, shall we?
Ingredients:
Rocky Road:
150g butter.
50g golden syrup.
300g white chocolate.
150g mini marshmallows.
120g party rings.
150g custard cream biscuits.
100g shortbread biscuits.
Filling:
90-95g Cadbury white chocolate bar.
6 white chocolate toffifee.
Topping:
Gold chocolate bars – something just to portion the loaf up.
Method:
Before you get into making this rocky road, you’ll want to do some prep work. Weigh up all of your ingredients into bowls (breaking the biscuits up into smaller pieces), line your loaf pan with parchment paper and get yourself a mixing bowl and spatula.
Into a large mixing bowl, place the marshmallows, party rings, custard creams and shortbread, breaking into smaller pieces as you go along.
Into your mixing bowl, place the butter and golden syrup and allow the mixture to melt and come together. Stir together until they have all melted and come together.
Now pour the butter mixture over the top of your white chocolate and let it sit for a minute before you stir very well, until he mixture is smooth and glossy.
Pour the chocolate mixture over the biscuits and stir and coat everything until its coated. You’re looking for an even coating all over.
Into the base of your lined loaf pan, place around 1/3 of the mixture, pressing it down to ensure a consistent layer. Then top with a mixture of chocolates, to add more sweetness and chocolate!
Top with the remaining mixture, getting it as compact and level as possible. I find using the spatula to ‘beat’ it into place works really well!
Then top the rocky road with 6 gold chocolate bars or whatever else you’d like, then place in the fridge until firm.
This can be made in advance as it keeps for 3 days once cut!
