It’s not all that festive but will make a brilliant treat if you’re short on time – it’s the humble rocky road but this isn’t any rocky road, this is a triple chocolate rocky road.
I know, it doesn’t seem all that impressive but inside of each slice, you have three layers; a dark chocolate, milk chocolate and white chocolate. Rocky road is a popular treat as it doesn’t really have too many rules – by that I mean if you wanted to mix the fillings up, you could.
For the layers of rocky road, I have used different fillings – which makes the so special. I kept it simple and used biscuits I had in jars in my pantry but you could really creative and use dried fruits, nuts or even more chocolate – the choice is really up to you!
Once made, rocky road is perfect as it takes next to no time to make – I made mine before bed and just cut it up the morning after but if you need to, this cane be made 3 days in advance and even be frozen – perfect to get ahead of the holidays.
The only bit of advice for this recipe is be creative with flavours and mix things up – nothing is wrong.
Anyway, let’s get started, shall we?
Ingredients:
Dark chocolate layer:
95g butter.
45g golden syrup.
150g dark chocolate.
50g filling (of your choice).
75g filling (of your choice).
60g filling (of your choice).
75g mini marshmallows.
Milk chocolate layer:
85g butter.
35g golden syrup.
150g milk chocolate.
50g filling (of your choice).
75g filling (of your choice).
60g filling (of your choice).
75g mini marshmallows.
White chocolate layer:
75g butter.
25g golden syrup.
150g white chocolate.
50g filling (of your choice).
75g filling (of your choice).
60g filling (of your choice).
75g mini marshmallows.
Topping:
150g white chocolate.
150g white chocolate spread.
Dark, milk and white chocolate chips.
Method:
Before you get started on any element of the recipe, you’ll want to do some prep work. I recommend lining your 8 inch square cake tin ahead of time, weighing up all of your ingredients and getting equipment such as a large mixing bowl, spatula and saucepan ready too.
The method I’m about to share will apply for all three layers of your rocky road, so I’ll only type it out once. Simply follow the same process for all three layers – I started with my dark chocolate, followed by milk chocolate and topped by the white chocolate layer.
Take a large mixing bowl and place in all of your fillings of choice and give them a brief mix together, just to combine them all. Set aside until needed later.
Into a small saucepan, place in the butter and golden syrup and place onto the hob over a medium-low heat, allowing to melt a little first. Once you’ve achieved that, stir continuously until the mixture is melted and smooth.
Remove the pan from the heat and add in the chocolate, mix until everything is fully combined. You should have a smooth and glossy chocolate mixture.
Take your bowl of fillings and pour over the chocolate mixture and stir everything together until its all coated. You shouldn’t be able to see a single ingredient clearly.
Chill in the fridge and repeat with the remains layers of rocky road.
Once you have all three layers, make the topping. Simply place white chocolate and white chocolate spread into a saucepan and heat until the chocolate melts, stir everything together until combined then pour on top of the rocky road and level it out.
Optionally you can scatter over a mixture of dark, milk and white chocolate chips over the top as decoration.
Chill until needed and then slice it up however you’d like, I went with 8 portions.
