Today I’m sharing my recipe for a super simple and straightforward forward lemon curd.
Homemade lemon curd will instantly blow the shop bought version out the window. When you make anything at home, it’s going to be different to what you get at the shops, mostly because it hasn’t got the artificial flavouring, colourings or additives.
I’ll admit, I love lemon curd – the tang and punch of lemon flavour you get. The shop bought varieties you can get are alright, nothing special, so once you try a homemade version, there’s honestly no going back.
Apart from the simplicity of the recipe, you only need 4 simple ingredients… Yes, 4 ingredients. I can almost guarantee you have these ingredients in your house – they are almost essential ingredients.
Anyway, let’s get started, shall we?
Ingredients:
Zest and juice of one large lemon.
75g Granulated sugar.
2 Large eggs.
50g Butter, chopped small-ish.
Method:
Before you get into making the lemon curd, I recommend doing some prep work. Start by weighing up all of your ingredients, grab a heatproof medium-large mixing bowl, whisk and spatula and place a medium-large saucepan with water and bring to a boil. You will also want to grab a sterilised jar, which holds approximately 300g.
To start on the curd, take your heatproof medium-large mixing bowl and place in the lemon zest and granulated sugar. Whisk the two together until they are well combined.
You can then go ahead and add in the lemon juice and beaten eggs, then whisk everything together until fully combined.
Then you can go ahead and set the bowl over the saucepan of simmering water, ensuring the water isn’t touching the bottom of the bowl. Don’t forget to whisk the mixture constantly.
After a couple minutes of mixing, you’ll notice the mixture starting to thicken, then is what you’re looking for. Add in the butter and continue mixing until the butter has melted and the curd is noticeably thicker.
Once you reach this stage, take a spoon and dip it into the curd. Once the spoon has been coated in the curd, if it stays on the back of the spoon – the mixture is done.
Remove from the heat and grab your jar, then carefully pour the curd into the jar. Screw on the lid and allow to cool down fully before placing into the fridge.
