Did you know with just a few simple pantry essentials, you could create a darn tasty tray bake? This week I’m showing you how to make these chocolate peanut butter squares.
You have a layer oaty goodness, topped with a sweetened peanut butter milk mixture and topped with a oaty chocolate chip top… What’s not to like? I’ll be honest – these are perfect.
They are quite monstrous – in a good way. You generally get a large portion – easily big enough for two but if you’re hungry, demolish it!
I won’t keep you this week, have a read and get on this recipe – I promise, you won’t regret it!
Anyway, lets get started, shall we?
Ingredients:
300g milk chocolate chips.
350 plain flour.
1 tsp baking powder.
225g butter.
350g light brown sugar.
175g rolled oats
70 g/2½ oz chopped mixed nuts
1 egg.
400g condensed milk.
70g crunchy peanut butter
Method:
Before you get started on any part of the recipe, you’ll want to do some prep work. Start by weighing up all of your ingredients and getting any equipment you may need, such as a stand mixer. Don’t forget to preheat the oven to 180°C/350°F – line a 9×9 inch square cake tin with parchment.
Place the plain flour and baking powder into a food processor, followed by the butter and pulse everything together until it starts to come together but doesn’t come fully together.
Transfer the mixture into a large mixing bowl and place in the light brown sugar and oats, stir everything together until it’s incorporated.
Take roughly about a quarter of the mixture and place into a separate bowl and add in the chocolate chips – mixing together until the chocolate chips have been fully worked in and are fully incorporated into the mixture – set aside until needed later on.
Into the remaining mixture, add in the egg and mix until it’s incorporated. As you mix, you’ll notice the mixture becoming more of a dough – this is what you’re looking for. Try not to overmix this mixture.
Use this mixture and place into your cake tin and press it into place – this is the base of the recipe. Transfer into your preheated oven and bake for 15 minute.
While the base is in the oven, make the filling. Simply grab a bowl and add in the condensed milk and peanut butter and mix together until they’re combined.
Once your base has had 15 minutes, allow to cool a little before transferring the condensed milk mixture onto it and spread it out to ensure a level layer.
Now take the remaining mixture thats studded with chocolate chips and place on top, spreading it out to make sure you have an even coverage – compress down using a spatula.
Return to the oven and bake for a further 20 minutes, until golden all over.
Once baked, allow to cool fully before you try to slice them up (otherwise it gets very messy!).
