Chocolate Chip Muffins

Instead of something super complex and requiring too many ingredients, I thought I’d keep it simple this time round with a batch of chocolate chip muffins.

These are honestly so quick and easy – you can have them made in half an hour, perfect as a quick, easy and affordable treat. Ideal for those lazy days or as a easy bake with kids over the half term holidays.

Just remember, you never need a reason to bake – celebrate whatever you bake however you’d like, nobody can stop you.

The muffins themselves are perfect – light, fluffy and studded with chocolate. What’s not to like?

Anyway, lets get started, shall we?

Ingredients:

150g butter.

100g granulated sugar.

3 eggs.

1 tsp vanilla extract.

150g plain flour.

2 tsp baking powder.

150g chocolate chips/chunks.

Method:

Before you get started on the recipe, you’ll want to do some prep work. I like to start by weighing up all of my ingredients, lining a muffin pan with liners, getting any equipment I may needs (such a stand mixer and spatula) and not forgetting to preheat your oven to 200˚c/350˚f.

Start by placing the butter and sugar into a bowl and beating on a medium-high speed, allowing the two to become well combined.

Then you can add in the eggs, one at a time, beating well in-between each addition, before you add another. You may find the mixture looks a little scrambled – don’t worry, this is normal, due to the amount of moisture being added all at once.

Give the bowl a good scraping down, this is just to incorporate any bits that may not have been fully incorporated from earlier on. You can now discard using the mixer and do the remainder by hand.

Now you can go ahead and add in the plain flour, baking powder and chocolate chips/chunks and fold everything together until all of the elements are fully incorporated. Give the bowl a good scraping down, just to incorporate any bits that may not have been fully worked in.

Grab your muffin pan (which has be lined with liners) and fill them 2/3 or 3/4 of the way full, then top each with a generous amount of chocolate. Then place into the preheated oven and bake for 18-20 minutes – or until a tester comes our clean. They should have risen and be golden in colour.

That’s it really – there isn’t too much to say about these muffins, apart from they are quick and easy to make – enjoy them warm or cold, the choice is yours.
