Halloween is over and Mariah Carey is being defrosted as we speak – so its the perfect time to enjoy the last of those autumn recipes. Today I’m sharing my take on a apple crumble loaf, its a little different but equally all tasty!
You may know you old school favourite apple crumble which is always good but sometimes you don’t have the time or effort to make it, so this apple crumble loaf is the perfect alternative. It can be made in advance and even better, enjoyed as part of your breakfast… Cake for breakfast, what a winner!
It’s not an overly light and fluffy nor dense cake, it’s somewhat in-between. Its also studded with chunks of apple and spiced with ground mixed spice, which all balances out so well and makes for a really tasty treat. You’re not getting just one flavour, its like a bite of autumn in a mouthful.
You could make the loaf without the crumble and it will taste just as good but honestly, the texture and flavour you get from the cake just adds a little something to it, honestly. Trust me, you won’t regret it.
Anyway, let’s get started, shall we?
Ingredients:
Cake:
50g butter.
70g light brown sugar.
1 egg.
150g plain flour.
1.5 tsp baking powder.
1/2 tsp ground mixed spice.
1/2 tsp ground cinnamon.
1 large cooking apple (or 2 small/medium), chopped.
Crumble:
40g plain flour.
1/2 tsp ground mixed spice.
1/2 tsp ground cinnamon.
25g butter.
40g granulated sugar.
30g oats (optional).
Method:
Before you get started on the recipe, you’ll want to do some prep work. Start by weighing up all of the ingredients, lining a loaf pan with parchment and getting any equipment you may need ready, such as a stand mixer and mixing bowls. Preheat your oven to 180˚c/350˚f.
To make the cake batter, start by placing the butter and sugar into a mixing bowl and beat until combined. It will be somewhat light and fluffy but not too much like a usual recipe as the ratios are a little different.
Add in the egg and mix until its been fully incorporated, then give the bowl a good scraping down. This is just to incorporate any bits that may not have been fully incorporated fully.
Now is the perfect time to add in the plain flour, baking powder and ground spices, along with the chopped apples. Fold everything in by hand until everything is fully incorporated – doing this by hand allows you to have more control over how much you mix and whether you over-mix your cake batter or not.
That’s it for the cake batter, set aside while you make the crumble topping.
For the crumble topping, simply take a mixing bowl and place in the plain flour, ground spices and sugar – whisk these together until fully combined. Add in the butter and rub it into the mixture until its fully incorporated, you’ll see some lumps develop – this is normal, don’t worry. Don’t over mix as if you are using the oats, you’ll want to add in them in and mix until fairly distributed in the crumble mixture.
Grab your prepared loaf pan and add in the cake batter, levelling it out as best you possibly can – this helps with the consistency of baking while in the oven. Then on top of the cake batter, you can add on the crumble mixture. It may look like a lot but trust me, it’s just the perfect amount. ensure the crumble has coated the top of the loaf well, then gently apply a little pressure, just to compress it down a little.
Place into the preheated oven and bake for around 35-40 minutes or until a tester comes out clean.
Allow to cool down almost fully and enjoy. You can have this loaf at any time of the day, trust me, I did!
